J\u2019ai pass\u00e9 un CAP Cuisine en 2022 puis un BP Arts de la cuisine en 2024 au CFA Interpro28. J\u2019ai effectu\u00e9 mes 4 ann\u00e9es d\u2019apprentissage au sein du restaurant Tomate et Piment de Chartres. C\u2019est un restaurant dans lequel j\u2019avais d\u00e9pos\u00e9 un CV et une lettre de motivation, et qui m\u2019a offert l\u2019opportunit\u00e9 de commencer mon apprentissage apr\u00e8s un stage de d\u00e9couverte.<\/span><\/p>\n

Je ne savais pas trop quoi faire en fin de coll\u00e8ge. J\u2019ai eu l\u2019occasion de faire mon stage de 3<\/span>e<\/span> chez le traiteur parisien Len\u00f4tre, ce qui m\u2019a bien plu et m\u2019a donn\u00e9 l\u2019envie de d\u00e9couvrir le m\u00e9tier de cuisinier.<\/span><\/p>\n

En mars 2024, gr\u00e2ce aux relations du formateur en cuisine Rachid Dermouche et du CFA, j\u2019ai pu effectuer un stage d\u2019une semaine dans la Brasserie L\u2019Ouest des Maisons Bocuse, \u00e0 Lyon. J\u2019y ai d\u00e9couvert une \u00e9norme brigade de 35 \u00e0 45 personnes qui travaillent en m\u00eame temps selon le type de pr\u00e9parations (entr\u00e9e, poisson, viande, garniture, dessert\u2026) pour satisfaire les 300 \u00e0 400 couverts r\u00e9alis\u00e9s par service.<\/span><\/p>\n

En sortie de Brevet professionnel, j\u2019y ai travaill\u00e9 durant un an. C\u2019\u00e9tait dur mais j\u2019en garde le souvenir d\u2019une exp\u00e9rience g\u00e9niale qui a confirm\u00e9 mon envie d\u2019\u00e9voluer dans des brigades importantes qui pour moi, garantissent un travail fluide et synchronis\u00e9 lors du service.<\/span><\/p>\n

Le m\u00e9tier de cuisinier me procure une esp\u00e8ce d\u2019adr\u00e9naline pendant le service. Je ne l\u2019expliquerais pas mais je trouve cela trop bien. Et voir les clients qui sont contents de manger, c\u2019est vraiment la meilleure des r\u00e9compenses.<\/span><\/p>\n

Qu\u2019il faut \u00eatre un peu fou pour faire ce m\u00e9tier. Ce qui est un peu vrai. Il faut aimer \u00eatre sous pression physiquement et mentalement.<\/span><\/p>\n

J\u2019aime bien m\u00e9langer des aliments qui ne vont pas ensemble comme de la framboise et de l\u2019estragon pour accompagner un poisson ou une viande rouge. J\u2019aime aussi les m\u00e9langes \u00ab\u00a0terre\u00a0\u00bb et \u00ab\u00a0mer\u00a0\u00bb comme un m\u00e9daillon de lotte avec un jus r\u00e9duit au chorizo. Ce sont des plats que je cr\u00e9e selon mon imagination. Parfois \u00e7a fonctionne et\u2026 parfois pas\u00a0!<\/span><\/p>\n

Y a-t-il une chose dont vous \u00eates particuli\u00e8rement fier dans votre parcours ?<\/span><\/p>\n

L\u2019obtention de mon BP. Je stressais \u00e9norm\u00e9ment. C\u2019est le seul examen pour lequel j\u2019ai r\u00e9vis\u00e9. Il y avait beaucoup plus de cours techniques qu\u2019en CAP et beaucoup plus de connaissances \u00e0 avoir pour l\u2019\u00e9preuve de pr\u00e9parations et productions de cuisine qui consiste \u00e0 r\u00e9aliser, en cinq heures, un plat libre et une entr\u00e9e ou un dessert impos\u00e9, accompagn\u00e9 d\u2019un commis et observ\u00e9 par un jury.<\/span><\/p>\n

J\u2019ai pour projet d\u2019int\u00e9grer un grand restaurant gastronomique d\u2019Antibes d\u00e9but 2026 en CDD dans un premier temps. Je vais \u00e9voluer au milieu d\u2019une brigade de 20 personnes avec beaucoup de poissons \u00e0 la carte. C\u2019est exactement ce que j\u2019ai envie de travailler.<\/span><\/p>\n

Le CAP Cuisine donne des bases mais il ne faut pas s\u2019arr\u00eater l\u00e0, et poursuivre par un BP car il y a beaucoup plus de technique et d\u2019heures de cuisine, donc un apprentissage plus approfondi. C\u2019est un plus sur le CV m\u00eame si les patrons se fient davantage \u00e0 l\u2019entretien d\u2019embauche et au stage pr\u00e9alable r\u00e9alis\u00e9 dans leur \u00e9tablissement.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t
